BBQ Mushrooms

This is a lovely Summer recipe. Seared savoury mushrooms with a sticky sweet sauce.

Serves / makes - 6 skewers


Ingredients

75g ketchup

1/2t mustard

1/2T apple cider vinegar

1/2T vegan worcester sauce

10g soft brown sugar

1/4t smoked paprika

1/4t cayenne pepper (optional)

1/4t garlic powder (optional)

1/4t onion powder (optional)

12 chestnut mushrooms, cut in half

6 skewers, soaked in water for 10 minutes

A little oil


Equipment

Small bowl

Frying or griddle pan

Pastry brush


Method

  1. In a small bowl, mix the ketchup, mustard, vinegar, worcester sauce, sugar, paprika, cayenne, garlic powder and onion powder. 

  2. Put 4 mushroom halves on each skewer.

  3. Heat a little oil in a wide frying pan or, if you have a griddle pan, brush the mushrooms with the oil. 

  4. Lay the skewers in the pan, cut side down. Cook on a high heat for around 5 minutes, turn over and cook on the other side for a few more minutes. 

  5. Brush the mushrooms with the sauce. Return the mushrooms to the pan to cook for just a few minutes until the sauce gets sticky. 


Tips

  • When putting the mushrooms onto the skewers, twist the skewer slightly - this stops the mushrooms from breaking.
