Red rice with sd toms
“On a rainy day who wants to cook? If you would rather stay under a blanket, laden with cats, tea in one hand, book in the other try this 1 pot dish. Simply pop it all into a pan, add stock to cover and let it simmer away.”
Prep time - 5 minutes
Cook time - 20-40 minutes
Difficulty - Easy
Serves/makes - 1-2 portions
Ingredients
1 large onion, sliced
2 large courgettes, cut into half moons
1/2 cup red carmargue rice (or other rice)
The leaves from 3 or 4 cavolo nero stalks, roughly chopped
3 garlic cloves, sliced
5 sundried tomatoes, sliced
1 tablespoon stock powder
Water
Salt, to taste
Method
Add all of the ingredients to your pan
Pour in enough water so the ingredients are just covered
Bring to the boil on a high heat then reduce to a simmer
Add a little hot water if the pan dries out too much (keep a full kettle on stand by for dishes like this)
Cook for around 30-40 minutes until the rice is cooked through
Serve....it's that simple!!!
Notes
If you use other rice (not red rice) you will have to adjust the cooking time to that particular rice.
