Chia Pudding
This makes 1 large pudding or 2 small chia puddings
Ingredients
1 medium sized banana
2 large dates (I used medjool which are soft, if yours aren’t soft simply soak them in just-boiled water for 10 minutes)
Zest of 1/4 lime
1/2c / 120ml water
1/4c ground almond or coconut flour
1T chia seeds
For the topping -
35g frozen raspberries
1/4-1/2T chia seeds
Method
Use a stick blender or other blender to blend the banana, dates, zest and water.
Add the ground almond and mix in well.
Add the chia seeds and mix again, pour this into 2 small bowls or glasses.
To make the topping allow the raspberries to defrost so juice comes from them. To speed this up you can press them with the back of a spoon. Add the chia seeds. Note that the more you add the thicker the topping will get.
Leave the puddings in the fridge to thicken for 3-4 hours.
