“This is one of the easiest recipes for healthy comfort food.......there are just 2 steps then it’s into the oven....that’s it! This is a perfect accompaniment to a vegan roast dinner and so damn moorish. The olive oil on top makes the top brown which makes it look so yummy.”

Serves/makes - 2-4 portions
Ingredients
1 block silken tofu
1 tablespoon nutritional yeast
1 teaspoon stock powder
1 sprig rosemary, stalked removed
125ml water
1-2 garlic cloves
4 small potatoes sliced finely
Extra virgin olive oil
Method
Heat your oven to 200c
Blend the tofu, nutritional yeast, stock powder, rosemary, water and garlic.
Add a little of the cream to a dish, add a layer of potato, just slightly overlapping. Repeat this until all of the potato and cream is gone.
Top with a little olive oil. Bake for around 30 minutes until the potato is cooked through the top is golden brown.
