Fig cheesecake
“Occasionally we need to make an emergency dessert, maybe we have a dinner party we haven’t quite planned enough prep time for. So when the need arises just whip out a few oatcakes, make a creamy thing, top with fruit and you have an instant cheesecake that would not look out of place in a fancy restaurant. ”

Serves/makes - 2 portions
Base Ingredients
4 oatcakes
1/2 tablespoons coconut sugar
A dash of ground cinnamon
A small amount of water
Base Method
Crush the oatcakes with a rolling pin into crumbs, put this into a bowl and mix with the sugar and cinnamon.
Add a teaspoon of water to the mixture, see if this is enough to make it just start to come together, if it needs more add more but be careful not to add too much.
Scatter this on 2 plates.
Cream and Topping Ingredients
1 New Roots Camembert style cheese, rind removed and discarded
1 tablespoon coconut sugar
6 tablespoons dairy free sugar free yoghurt
1 large fig or 2 small figs, cut into 6 pieces
Good balsamic or mint leaves or orange zest
Cream Method
Blend the cheese, sugar and yoghurt until very smooth, add this to the plates on top of the crumb base.
Add the figs plus balsamic, mint leaves and/or orange zest.
