Rhubarb Porridge

Prep time - 10 minutes

Cook time - 5 minutes

Difficulty - Easy

Serves / makes - 1 portion


Ingredients

2 rhubarb stalks, roughly chopped

3 medjool dates, stone removed

1 apple, peeled, cored and chopped into small pieces

A handful of quinoa flakes or ground almond

240ml plant milk

120ml water

Rose petals (optional - these can be found in middle eastern shops as they are used to make tea)


Equipment

Saucepan

Wooden spoon


Method

  1. Put all of the ingredients except the petals into a saucepan. Bring to a simmer. Using a wooden spoon mush the dates up. 

  2. Simmer for 5 minutes stirring occasionally. Pour into a bowl and decorate with the rose petals.
