Nut Cookies

These cashew cookies are light and healthier than the average cookie. The recipe is simple to make and is quick too.

Ingredients

150g cashew nuts

75g ground almond

1/4 teaspoon bicarbonate of soda

2-3 teaspoons brown sugar

2 tablespoons coconut oil

1 tablespoon maple syrup, carob molasses, regular molasses or black treacle


Equipment

Chopper attachment of a hand blender or in a food processor

Mixing bowl

Saucepan with water for melting oil

Baking tray


Method

  1. Preheat the oven to 180c/360f/GM4.

  2. Grind the cashews in the chopper attachment of a hand blender or in a food processor. Put the cashews into a large mixing bowl. Add 2 teaspoons of the brown sugar, ground almond and bicarbonate of soda and mix well.

  3. Heat the coconut oil till melted and pour into the dry mixture. Add the carob molasses and vanilla essence.

  4. Mix everything together. At this point taste the batter to see if you need to add any more sugar. If you do add it a little at a time.

  5. Form into 8 small balls by pressing between your cupped hands and rolling, then press them so they are round but flattened a little.

  6. Put onto a baking sheet and bake for about 20 minutes. They will go a dark brown colour.
