Edamame Hummus

This protein-packed hummus is easy to make but be sure to keep blending until it is completely smooth.

Serves / makes - 200ml


Ingredients

1T sesame seeds

200g shelled frozen or fresh edamame beans

1 garlic clove, around 4g

Juice of 1 lime

1T extra virgin olive oil

1T water

1/8t sea salt

1 sheet sushi nori (sushi paper)

1/4t sea salt


Equipment

2 bowls

Hand blender

Frying pan

Chopper attachment of your hand blender or food processor


Method

  1. If you are using frozen beans put them into a bowl, pour on boiling water and leave for 5 minutes. Drain well and put them into a high-sided bowl.

  2. Add the seeds, garlic, lime juice, oil, water and 1/8t salt to the beans. Blend well with a hand blender until it is completely smooth.

  3. Toast the nori in a dry frying pan until it is dark but be careful not to burn it. Crumble the nori, put it into the chopper attachment of your hand blender. Add the salt and grind the nori and salt until they are crumbs.

  4. Spoon the hummus into a bowl and scatter the nori on top.
