Hazelnut Nice Cream

Figs pair very well with hazelnut and coffee as in this recipe. As figs are sweet and gooey they need bitter and creamy to balance out.

Ingredients

1 banana, chopped and frozen

2 teaspoons ground coffee

1 tablespoon toasted and ground hazelnut, plus a little to go on top

A splash of dairy free milk

1 large fig, cut into quarters


Method

  1. Put the banana, coffee, hazelnut and milk in a jug. Blend, with a hand blender, until very smooth. To keep it thick you should try to use as little milk as possible, but just enough to give the blender something to work with. The banana will be hard so you have to push down quite hard with the blender.

  2. Put the figs in a bowl, top with the nice cream and a little ground hazelnut.
