Spookuloos

Spiced and scary, these speculoos cookies are simple to make. Use readymade icing which is easy to roll and cut.

Ingredients

5T ground cinnamon

1t ground nutmeg

1t ground cloves

1/2t ground aniseed

1/2t white pepper

1/2t ground coriander seed

1t ground ginger

1/2t ground cardamom

1/2t ground mace

200g oats

50g gram flour

5T coconut sugar

3T oil

3T plant milk

White fondant or designer icing

Black designer icing or black food colouring plus icing sugar

Method

  1. Heat the oven to 180c/360f/GM4.

  2. Mix all of the spices together and put them into a jar. The spice mix will be more than is needed for this recipe.

  3. Blend the oats in a high speed blender, alternatively use pre ground oat flour. Put the oats, gram flour, sugar and 2T of the spice mix in a bowl. Mix well. Add oil and plant milk, mix well. You will need to work the dough with your hands.

  4. Put the dough between two sheets of baking paper. Use a rolling pin to make the dough very thin, around 4mm. Use cutters to cut out shapes of dough.

  5. Place them on a baking tray covered with baking paper. Bake for 8-10 minutes until they have browned. Allow to cool.

  6. Roll out the fondant or designer icing. Use the cookie cutters to cut the same shapes as the cookies. Place the icing onto the cookies.

  7. Use the fondant or designer icing to make the other parts of the designs - white skeleton shapes and black eyes for the ghost.
