Butterbean Mash

This is a super simple and very healthy alternative to a festive meal favourite - mashed potato. The recipe calls for jars of butterbeans rather than cans. They can be harder to find but the result is significantly creamier and much more reminiscent of mashed potato.

Ingredients

1 large jar or 2 jars of butterbeans, drained and rinsed well

1-2 cloves of garlic (bear in mind the garlic will be raw so very potent)

2 spring onions, roughly chopped

8T dairy free milk, unsweetened

2t Dijon mustard or a similar mustard

1/4t salt

1/2T fresh thyme leaves

Hand blender

Small saucepan with lid


Method

  1. Put all of the ingredients (except the thyme) in a small saucepan and blend until very smooth using a hand blender.

  2. Warm gently on a low to medium heat, with the lid on. Once piping hot, serve and top with a scattering of thyme leaves.
