Jackfruit Portobello Burgers

This is a simple jackfruit burger recipe that has maximum flavour. We use portobello mushroom instead of a burger bun to max out on umami!

Serves / makes - 4 burgers


Ingredients

8 large portobello mushrooms

60ml tamari or soya sauce

60ml water

1 tin of green jackfruit

6T passata

60ml water

1T tamari

1T rice syrup

1/4t cayenne pepper

1/2t smoked paprika

1/2t ground cumin

1/4t onion salt

1/4t garlic salt

A pinch of pepper

Method

  1. Preheat your oven to 200c/390f/GM6.

  2. In a large bowl mix 60ml water and 60ml tamari, add the mushrooms and mix well ensuring they are covered in the sauce.

  3. Put the mushrooms and the sauce onto a baking tray and into the oven. Bake until cooked through, this could take 10-15 minutes depending on how big the mushrooms are.

  4. Drain and wash the jackfruit, separate the pieces with your hands and squeeze all of the water out of it. Put the passata, water, tamari, syrup, spices and pepper into a saucepan.

  5. Add the jackfruit, mix well and heat until it bubbles. Simmer until the jackfruit is soft. (Green jackfruit that is soaked in brine in the tin will be mush softer than green jackfruit soaked in water in the tin.......so if you have the latter you will need to simmer it for longer, the former literally just needs warming through).

  6. Take one portobello, load it up with the jackfruit and top with another mushroom. Repeat this with all of the mushrooms and jackfruit.
