Veggie Patch Burgers

Turnip is an underused vegetable yet it’s lovely when roasted. It’s also very cheap so this is a budget-friendly dish.

Cook time - 30 minutes

Serves / makes - 20 cookies


Ingredients

4 turnips cut in half

A handful of baby spinach leaves

A handful rocket leaves

8 large sun dried tomatoes

2 handfuls of white quinoa 

2t stock powder

Salt and white pepper, to taste

Method

  1. Heat your oven to 200c/390f/GM6, place the turnip on a baking tray and cover with foil. Bake for 25-30 minutes until hey are completely soft, scatter some salt on them. 

  2. Cook the quinoa in 1/2 a cup of water, the stock and salt and pepper. Bring to the boil, reduce to a simmer with the lid on. The quinoa should take 10-15 minutes to cook. 

  3. Assemble your burgers on a plate with the bottom half of the turnip, the greens, the quinoa, the tomatoes and the other half of the turnip on top.
