Courgette Crisps

The sexier cousin of kale chips, courgette crisps carry loads of flavour on their flat surfaces.

Serves / makes - 1 tray


Ingredients

1 teaspoon of onion powder

2 teaspoon nutritional yeast

2 teaspoon extra virgin olive oil

A dash of salt

1 courgette cut finely, around 3mm

Baking tray


Method

  1. Preheat your oven to 50-80c (120-180f). If you are impatient set it to 80c....they will cook quicker but you risk some being over cooked if you don't keep an eye on them. If you're patient and have time set it to 50c.

  2. Mix the onion powder, nutritional yeast, oil and salt in a large bowl. Add the courgette and mix using your hands. Ensure all of the courgette is covered in the sauce.

  3. Lay the courgette on a baking sheet placed on a large oven tray or one of the oven shelves.

  4. Bake for 1-2 hours, checking intermittently. Some of the crisps (usually around the edge) will cook quicker than those in the centre, so remove those and carry on cooking the rest.
