Simple Stew

I love a one pot dish. It makes dinner time so much easier as there is less cooking and less washing up! This is a budget friendly recipe perfect for a chilly evening.

Prep time - 10 minutes

Cook time - 40 minutes

Difficulty - Easy

Serves / makes - 3-4 portions


Ingredients

300g onions

300g potatoes

300g carrots

150g split dried peas

2t stock powder or 1 stock cube

1/2t salt

1t fresh thyme leaves

Freshly ground black pepper, to taste

Enough water to cover the ingredients

A large saucepan with a lid


Method

  1. Cut the top off the onions and remove the skin. Slice them as finely as possible, they need to be cut fine.

  2. Peel the potatoes and cut them into large pieces, about 3cm square. Cut the carrots into smaller pieces, about 1.5 cm wide.

  3. Put the onions, potatoes, carrots, peas, stock, salt, thyme leaves, pepper and water. Heat the pan, on a high heat, with the lid on. Once it starts bubbling lower the heat to low-medium.

  4. Allow the stew to cook for around 40 minutes, until the peas are soft. Lower the heat until you are ready to serve the stew.

  5. This recipe is perfect for batch cooking as it freezes very well.
